A Little Piece of Holland,
Delivered with Christmas Cheer
Discover how traditional Dutch cheese is made and why we're sharing a little piece of the Netherlands with our customers this Christmas.

The Netherlands is famous for many things: beautiful flowers, innovative horticulture, windmills and, of course, cheese!
At Koberg, we're proud of our Dutch roots. Since 1969, we've been connecting Dutch growers and suppliers with customers across international markets, particularly in the United Kingdom.
This Christmas, we're bringing another Dutch tradition to our customers. From 16 November 2026, every customer placing an order with Koberg will receive a special Dutch cheese hamper with their delivery!
But what makes Dutch cheese so special, and how is it actually made?
A Dutch Tradition That Goes Back Centuries
Cheese has been an important part of Dutch culture for hundreds of years. The Netherlands is internationally recognised for varieties such as Gouda and Edam, which are enjoyed around the world.
Historically, Dutch farmers produced cheese as a way to preserve milk. Over time, cheese production developed into an important industry, combining traditional craftsmanship with modern production techniques.
Today, Dutch cheese remains a symbol of quality, tradition and craftsmanship.
How Is Dutch Cheese Made?
Although different varieties require different techniques, traditional Dutch cheese production generally follows six important steps.
Fresh Milk
The process starts with milk, usually from cows. The milk is carefully checked for quality and, depending on the cheese being produced, may be pasteurised before production begins.
Turning Milk into Curds
Starter cultures and rennet are added to the milk. These help the milk coagulate, separating it into solid curds and liquid whey. The curds form the foundation of the cheese.
Preparing the Curds
The curds are cut into smaller pieces to release more whey. For many Dutch-style cheeses, some whey is removed and replaced with warm water, helping create their characteristic mild flavour and texture.
Pressing the Cheese
The prepared curds are placed into moulds and pressed to remove excess moisture and create the familiar round cheese shape.
The Salt Bath
After pressing, the cheese is placed in a brine bath. The salt contributes to flavour, helps preserve the cheese and supports the development of its rind.
Ageing to Perfection
Finally, the cheese is left to mature under controlled conditions, from a few weeks to more than a year. Younger cheeses are generally mild and creamy, while longer-aged cheeses develop stronger, richer flavours and a firmer texture.
